Moms Meatloaf

 

 

 

I start out with 2 pounds of extra lean ground beef.
As with anything you can flavor this with anything
that you like. I used 1/2 to 1 cup diced onion, diced
red and green peeper to taste, 1 egg, 1/2 cup oatmeal
fresh cracked pepper, garlic salt to taste, and 1/2 can
of tomato sauce approx. 7 oz., reserving the other half
for later. Mix gently but thouroghly in a bowl then
form into a loaf.

Onto the egg at a dome of 350°, in the future I will
cook this at 375°, no wood for smoke. While we are
waiting for this first stage of the cook we can fix up
that leftover can of tomato sauce. Take the half can
and add 3 teaspoons of sugar to it, then fill the remainder
of the can with water and mix well, this will taste overly
sweet but it isn`t finished yet.

After 1 1/2 hours I pulled it off and drained all of the
" STUFF " from the pan and coated the meatloaf with
a full can of tomato sauce, not the sweet one, a second can.
Then back on the egg.

After another 30 minutes I removed it from the egg. Then
removed it from the pan allowing it to rest for 15 minutes.
Now combine all of the sauce from the pan with the can of
sweetened sauce you have reserved, warm if necessary.
Slice and top as you desire, but be sure to save enough
sauce to drizzle on your individual serving.
